I'm not sure when its heyday was, but I have made a couple pineapple upside down cakes for friends at their (sorta) request. This one is for the aforementioned friend's birthday (see Ticking Stripe Love). It's pretty darn good and is a step up from the usual box mix and canned pineapple. But it's easy. Really easy. I don't have a skillet as the recipe calls for, so I make it in a regular (nonstick) 9" round cake pan.
