Made some cookies last night, in part, because Rush wouldn't like 'em. He's anti-marshmallow. When s'mores come out at parties/bbqs/beach bonfires, he's strictly a graham cracker and chocolate guy. Which is funny because I'd rather just toast marshmallows. I was inspired by

Anyway, they were prettier last night before they kinda deflated, but they taste pretty good. It's a Martha recipe which leaves me feeling a little conflicted. Her baking recipes are usually pretty delic, but I find they have a lot of steps. This one wasn't so bad, but I'm not sure I'll make them again unless work folks go cuckoo over them.
These look so delicious! I also love the gooey marshmallow. It really is the best part of a s'more!
